I’m more after relatively simple recipes that anyone can cook on a week night - not too much prep, short ingredients list, without compromising on flavours - a recipe you’d make for a meat eater to convince them to go vegetarian!

vegan stir fry are my favourite as pretty quick or slow cooker where you can just throw everything in and forget about it.
