Recipes of the week
This week on the menu we have an Iranian dish re-interpreted by a French chef, delicious haloumi tacos and a generous, flavoursome vegan tajine.
See here for all recipes and the list of corresponding groceries for the week.

Recipe #1 - Chef’s revisited lentils Ash.
Heads-up, for this recipe you need to make mint oil, which takes 24h+ as you need to dry mint leaves overnight. Super easy to make and well worth the effort, I promise!

The best climate explainers
If you’re reading this newsletter, you’re probably already concerned / alarmed about climate change.
But you probably also know people who aren’t concerned about climate change, or feel like it’s an issue that is peripheral to them.
For this reason, I wanted to share a few of the best explainers on climate change I’ve come across. All are less than 15 minutes reads. Pick one or read them all, up to you!
#1 - ABC News - Why the next 5 years are an opportunity to buy us time to solve climate change
A well-presented visual explanation of why it’s so important to act now on climate change, and the concept of the carbon budget (much much better than my coverage of it). The article is the first in a series of three stories from ABC News Story Lab exploring why action on climate change is now picking up urgency, and the opportunities we have to solve this global problem.
#2 - Tangle - An (actual) explanation of climate change.
This is a post from the non-partisan US politics newsletter Tangle, and a thorough, basic explainer of climate change.
#3 - Tomorrow - A pragmatic guide on climate change.
This is a guide from French/Danish start-up Tomorrow (the guys behind the genius Electricity Map) which covers what Climate Change is, what the drivers behind it are, and what we as individuals can do about it.
And if you prefer to experience rather than read, the Climate Collage of course is THE best climate education you can get in 3 hours. Check out events in Australia on our Facebook page.
Do you have a great climate explainer that helped you realise the urgency and magnitude of the challenge? Please share in the comments!
